Tiny New Potatoes with Parsley
And Mustard Dressing
24 new potatoes
(1 inch to 1 1/2 inches in diameter)
1/4 cup chopped fresh parsley
Mustard Dressing
Salt and freshly ground black Pepper, to taste
In a large pot, cover the potatoes with water and bring to a boil over high heat. Lower the heat and simmer, covered, until tender. Remove from the heat and drain. Cut the
Potatoes in half, then place in a medium serving bowl. Add the parsley and dressing to the Potatoes. Season with salt and pepper. Serve. Serves 4.
Mustard Dressing
2 tbsp Dijon mustard
2 tbsp cider vinegar
1 clove garlic, minced
¼ cup extra-virgin olive oil.
In a small bowl, whisk together the mustard, vinegar and garlic. Gradually whisk in the oil until the dressing is completely blended.
